Right off the bat let me answer why I came up with yet another Coconut Avocado Popsicles recipe when there are possibly a million of them already on the internet.
The Coconut Brown Sugar in these avocado popsicles will make you swoon! In addition to being paleo approved in moderation, coconut brown sugar has a unique flavor profile that just goes with the coconut milk and the avocados.
I have been making the Paletas De Aguacate Y Coco for many years now. I first found the recipe on my friend Yvette’s blog. It was like I had hit the jackpot! A recipe that was full of coconut milk and avocados. Fatty, creamy mouthfuls of sweet deliciousness. It has been a family favorite for quite some time.
I switched to making these popsicles with honey after I began on a journey to eliminate the ultra refined white sugar from our diet. Although the popsicles I made with honey turned out fine, they just did not have the oomph factor that you want from a Paleta or a Mexican popsicle. The honey was not a prominent flavor. You couldn’t even tell there was honey in these popsicles.
So I switched to using coconut brown sugar. It is lower on the glycemic index that table sugar. Coconut sugar contains lsmall levels of Iron, Zinc, Calcium, and Potassium as well as Polyphenols and antioxidants! Table sugar on the other hand is just empty calories.
And the coconut sugar just makes these popsicles so much more delicious! You have to make them at least once!
A summer treat that delights everyone!
These popsicles are made with just 5 ingredients : coconut milk, avocados, honey, coconut flakes and coconut sugar. They are as easy to make as making a smoothie.
Talking of summer, there are a few other popsicles recipes that are quite the favorite in our house. The Watermelon Popsicle is refreshing, The Blackberry Popsicle is an Indian street food copycat and the Green Mango Popsicle is a summer drink in popsicle form.
