Orange and Poppy Seed quick Bread

A few weeks ago my friend Holly from A Baker’s House shared the message about Food Blogger Cook Book Swap 2014. She was ““Participating in the Food Blogger Cookbook Swap, hosted by Alyssa ofwww.EverydayMaven.com and Faith of http://www.anediblemosaic.com. She was to send cookbook to a food blogger and receive a cookbook in return!”

What an interesting idea! Thank you Holly, for sharing a lot of fun and interesting stuff in addition to the delicious bakes you comes up with.

I went ahead and signed up for the swap and waited excitedly to find out who I will be sending a book to and who will be sending me a book.

The D day arrived and I found out that I would be sending a book to Marianne who co authors the beautiful blog The whole familys food . To find out who was sending me the book I had to just wait and let it arrive. The suspense was killing me, but that was part of the fun.

Marianne’s blog was a great find. Beautiful photography, elegant food. Completely sublime! Hmm! I thought! What should I send her. The only book that spoke back to me for Marianne was Plenty. Marriane, I hope you like this book as much I do.

Book Swap

My book was sent by Heather of Rocky Mountain Cooking. It is a Gorgeous book with beautiful photos of the Rockies and some really good recipes. The best part ? It has recipes from some of my favorite restaurants. I knew I wanted to first bake something from the book . I had chosen the pecan puffs but then my daughter insisted that she wanted the Orange poppy seed quick bread. She got to pick because she is the one who would have to eat the bulk of what I baked. So Orange and Poppy Seed Quick Bread it was.

The following recipe is adapted from the Colorado Classique cookbook.

Orange and Poppy Seed Quick Bread and a CookBook Swap

Ingredients

Batter

  • 3 eggs
  • 3 cups all purpose flour
  • 2 1/2 cups sugar
  • 1 1/2 cups milk
  • 1 cup butter
  • 1 1/2 tbs poppy seeds
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 1 1/2 tsp almond extract
  • 1 1/2 tsp vanilla extract
  • 2 tbs orange zest

Glaze

  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 3/4 cup sugar
  • 1/4 cup orange juice

Instructions

For the bread

  1. Preheat oven to 350 degrees.
  2. Beat the butter well and mix in the sugar.
  3. Add in the eggs, mix then add the milk and both extracts.
  4. Sift the flour, baking powder, salt and poppy seeds.
  5. Add the dry ingredients to the egg mixture and mix well.
  6. Add in the orange zest.
  7. Pour the batter into 2 greased and floured loaf pans.
  8. Bake for 40 to 50 minutes or until a tester inserted in the center comes out clean.

For the glaze

  1. Prepare glaze by mixing all ingredients in a small sauce.
  2. Heat until they are blended. Do not boil.
  3. Spread the glaze on the baked bread while still hot, then cool in pans on a rack.
  4. Remove from pans when nearly cool.
